There are also many seating nooks located in lush courtyard garden where you can catch up on the glossies or take a cup of tea. The Colony Palms has 56 guest rooms and suites, stunning mountain views, and a dedicated staff ready to make your stay welcome. Should you wish for a shopping excursion, just hop on their selection of “town-bicycles” to explore the areas finest in art galleries, mid-century mod stores, café’s, and chic shoppes. The Moroccan Spa is a quaint haven offering a variety of spa services including massage, body, and skin treatments to rejuvenate, refresh, and replenish. There is a Moroccan design influence in décor, sights, and sounds drawing you into its quiet, low-key ambiance. Try the Hot Lava Shells massage. This unique treatment uses natural tiger clam shells recycled from the South Pacific, “heated” from within by a lavender oil. The combination of deep, nurturing, penetrating heat and Swedish-style massage, melts tension and helps you experience a deeper state of relaxation. The renowned Purple Palm Restaurant & Bar (there’s a little history here involving a mobster who was part of the Purple Gang in its early years) has a complete dining room as well as a Poolside Terrace to satisfy your culinary cravings. The restaurant and terrace have a retro flair as well as a well-cultivated menu. Special monthly wine and food pairings invite interested parties to partake in a sumptuous dining experience. The Chef ‘s Table Series happens once a month with the last one featuring Chef Luke Reyes and Bar Manager Avery Underhill of Butchers & Barbers in LA. This was a 5 course pairing with our favorite take away being the Popcorn w/Thyme and Roasted Garlic. Chef Luke Reyes kindly sent us the recipe so you can create this mouthwatering, melt in your mouth snack at home. Popcorn w/Thyme and Garlic Oil : 1/2 cup popcorn kernels 1/2 cup canola oil 1 bunch thyme, picked and chopped 3 tbs granulated sugar 3 tbs kosher salt 2 sprigs Rosemary, picked and fried 1/2 cup roasted garlic oil (recipe below) 1. Place 1 cup oil in sauce pot with 8 cloves of garlic over light heat. Slowly cook until garlic is caramelized, never frying, so that oil doesn't become acrid. Allow to cool and strain. Set aside. 2. Place popcorn kernels and popcorn into large sauce pot and cover. Turn flame to high, and shake pan continuously to ensure popcorn doesn't burn or stick to pan. Listen to the pan as the kernels pop. When you no longer hear popping, remove from heat and pour into a bowl. 3. While popcorn is still hot, pour garlic oil into bowl with popcorn and toss to coat. Season with remaining ingredients and enjoy.
